Designed for cooks who value finesse over force, this compact chef’s knife sits between a petty and a full-size gyuto. The 150 mm blade reaches a little farther than a 130, slipping into tight spaces and gliding through shallots, garlic, herbs, citrus, and precise trimming with ease. At only 79 g, it feels light and responsive—accelerating quickly and stopping exactly where you intend.
Dialed for control: a 260 mm overall length and a balanced 110 mm handle sit naturally under a pinch grip. The slightly longer blade keeps a relaxed wrist angle and a low tip for fine brunoise, chiffonade, and detail cuts, while adding enough heel and reach for everyday prep on small to medium boards.
