FAQ

About the knives

Find clear answers to the most common questions about our knives and care instructions.

Where are RYODO knives made?

RYODO knives are made in Seki, Gifu Prefecture, Japan, in collaboration with the historic house Takeuchi Hamono. Each knife is hand-crafted by artisans carrying on over 700 years of Japanese forging tradition.

What is the hardness of the steel?

Our steel measures 59–60 HRC on the Rockwell scale—an ideal balance between long-lasting sharpness and ease of maintenance. This hardness ensures precise, stable cutting over time without making the blade brittle.

Are they fully stainless steel? Do they rust?

Yes—every knife is made from high-quality stainless steel. They resist corrosion and ensure perfect hygiene, even in professional kitchens. We still recommend drying them thoroughly after use to prevent any moisture marks.

What’s the difference between a professional knife and a home knife?

RYODO knives deliver the precision and balance of a professional tool while remaining light and comfortable for daily home use. Their ergonomic design ensures a natural grip and smooth, controlled cuts.

Do you offer left-handed models?

Yes, several models are ambidextrous. For a blade ground specifically for left-handed use, simply specify it when ordering.

What types of cuisine are they suited for?

Our knives adapt to any cuisine—Japanese, French, or contemporary. Their precise edge cuts without crushing fibers, ideal for raw fish, finely sliced vegetables, and delicate meats.
